Do we need to buy 2 infant/toddler seats, one for each car, for our baby once he outgrows his infant car seat?
With the Graco Infant Snugride (the seat we've been using for the last 4 months), we were able to purchase an extra car seat base for our 2nd car, but I'm not sure how the infant/toddler convertible seats work. My husband and I swap dropping off and picking up with our daycare and I'm confused as to how this will work once our baby boy graduates to the infant/toddler convertible car seat.

Convertible seats don't have bases, so yes, you will need a seat properly installed in each car for your child.
If you want the option of using a base for a bit longer, Graco SafeSeat 1 is an infant bucket-style seat that goes until 30 lbs, and clips into a base like the Snugride does (different base of course, but the same idea).
Or, you and your hubby could swap cars so that you only have a seat in one car, though that is likely not as practical.
